Mini greenhouse epiphany

Had a epiphany a few weeks ago. An empty Redvines container is the perfect size to start those finicky sun-loving plants from seeds...especially in the Pacific Northwest where it's May and still in the 50s. Look at how well the kids' peppers are doing!

Tabbouleh Salad

I discovered tabbouleh a few years ago and have been addicted since. Here's my go-to version:

1 cup bulgur wheat
1 1/2 cup boiling water
1/4 cup lemon juice
1 tsp lemon zest
1/4 cup olive oil
1 chopped tomato
1 seeded & chopped cucumber
1 T minced mint
1 T minced parsley
1/3 cup crumbled feta

Pour bulgur in medium bowl. Mix in water, lemon juice, lemon zest, and oil. Cover with plastic wrap and let sit for one hour. After the hour, remove plastic fluff the bulgur with a fork and mix in remaining ingredients. Chill & serve.

FUNDRAISING TIME!!

Yep - it's that time. Gavin's school is raising funds for scholarships and technology for his school and holds an annual "Art Walk and Raffle" the Friday before Spring Break. Christmas in Fairhaven

With Brandon at Apple Cup, Grandma Patty joined the kids and I as we wandered around Fairhaven taking in the sights. Paper Dreams, Village Books, The Grinch, Santa, carolers, Katie's Cupcakes and a horse-drawn cart ride through town. Christmas is in the air!
